I will keep this as simple as possible. First you need to understand that fat cells are genetically programmed to store as much fat as possible.

Fat cells are part of our genetic code; they enable us to use our stored energy (fat) when food becomes scarcer. And this survival mechanism is working today as it did millions of years ago.

However, today unlike years gone by, there is an abnormal abundance of food available in our modern society, and we no longer need to store so much fat to survive.

On consuming too many calories, your body switches to survival mode preparing for leaner times, but today we no longer experience these lean times, so your body ends up storing all those extra calories as fat. The opposite is true for when you eat fewer calories, your body will release stored fat for energy because your body will always endeavor to remain in equilibrium.
